Retail Peach Cultivar Identification

Grocery-store peach labels usually identify retail class, not cultivar. A shelf sign can support yellow peach, white peach, donut peach, flat peach, Texas peach, large peach, or USA peach. It does not automatically prove a named horticultural cultivar. This boundary protects the sorbet from false precision: the fruit can be handled honestly without inventing lineage.

What Retail Evidence Can Support

Retail evidence is useful when it is treated as retail evidence. A store sign, PLU, app listing, sticker, receipt, or visible fruit form can support the retail identity of the fruit. This level of evidence can name the working fruit class and guide handling. It cannot turn a checkout label into cultivar proof.

  • flesh color when named or visible;
  • fruit type;
  • broad retail category;
  • price and purchase context;
  • general origin language if the sign actually says it;
  • specialty morphology, such as flat or donut peach;
  • local sourcing uncertainty when the label stops short of a farm or grower.

What Retail Evidence Cannot Support

Retail evidence and PLU codes both require restraint. Produce PLUs are 4- or 5-digit numbers used to identify bulk produce by attributes such as commodity, variety, growing method, and size, while extension guidance frames the same system as a fresh-produce code based on commodity type, variety, and item size. For peaches, this supports a retail produce item such as yellow peach, white peach, or donut peach. A code does not, by itself, establish a named cultivar unless the source record explicitly ties the lot to that cultivar. Retail evidence usually cannot support the following claims.

  • exact cultivar;
  • exact farm;
  • exact orchard block;
  • exact harvest date;
  • source authenticity;
  • chemical composition;
  • flavor performance across seasons.

Retail Examples

The Central Market flat white peach has the strongest retail identity in this set. The product naming, visible flat morphology, signage, stickers, and PLU evidence support a flat or donut peach type. Saturn-type language can work as a morphology or aroma comparison. It is not proof of the literal Saturn cultivar.

The Walmart fruit has weaker identification evidence. It supports yellow peach and early-season candidate language. It does not support a public cultivar name without supplier confirmation. The Central Market June 8 yellow-peach batch is also retail-class evidence. The sign supported yellow peaches, USA, PLU #4038, and price. It did not identify a farm or cultivar.

Sorbet Implications

Fruit identity changes sorbet decisions. Early-season yellow peaches can bring greener C6 freshness, firmer acid structure, and less deep lactone sweetness than later fruit. A flat white peach can sit in another aromatic lane. A Texas peach sign can support the purchase story only if the sign says Texas; it cannot prove the farm. That boundary is why the peach sorbet formula treats sourcing as a measurement problem too: the fruit still needs the Brix and pH workflow and the peach aroma map before it becomes a formula. The practical sourcing rule is direct:

  • name the retail class;
  • describe the measured Brix and pH;
  • describe the sensory read;
  • use cultivar only as candidate or comparison unless confirmed by supplier evidence.
