- Rest cold long enough for hydration to finish.

Perfect Sorbet does not decide the final formula by itself. It does not replace Brix measurement, prove the peach cultivar, make weak fruit aromatic, or remove the need to evaluate texture after hardening. It also provides no basis for label claims, dietary claims, or product-specific specifications. The correct use is narrower: it gives the peach sorbet a no-heat stabilizer scaffold while the rest of the formula controls fruit load, sweetness, acid, and service behavior.
