Amylases
Amylases convert starch into shorter carbohydrates. Alpha-amylase opens starch chains and thins starch-rich mixtures; beta-amylase releases maltose; glucoamylase releases glucose. The preparation and food matrix determine how those reactions serve bread, beverages, brewing and sweet potato cooking. Malt and rice koji contribute whole ingredients alongside their enzymes.
