If the sorbet loses the lactone lane, it may become floral fruit ice, but it stops reading as peach. The peach-quince overlap belongs as a support note, not the main identity.

If a peach sorbet is chasing the quince-adjacent side of peach, start with ripe aromatic fruit and protect the volatile top notes. Avoid long open heating. Limit oxygen exposure. Process cold or sealed. Preserve esters and green volatiles, then acidify for clarity after the main aroma capture and let peach lactones carry the body. The goal is not quince; it is peach aroma with a floral, green, violet-adjacent edge, carried through the cold-processing method into the peach sorbet.
