Sweetness uses sucrose = 100. Sensory comparisons need matching concentration, temperature, matrix and measurement basis; unspecified or differing conditions limit recipe substitution. Solids and water are mass percentages unless stated; category or grade limits require a lot assay for actual composition. DE, Brix, sweetness and freezing behavior describe separate properties. — marks an unavailable comparable sweetness value. POD is a declared sweetness convention; PAC requires its own freezing metric, reference and method. A calculated coefficient and a measured freezing result describe different quantities. Specification limits, typical composition and lot assays have different uses in formulation.
